Late Season Snow
Snow geese are an amazing opportunity to bumper the meat freezer before the Summer. These Hefty birds are great for sausage making, burgers, and soups. Spent the day with my brother watching flying v's of black tipped Snow geese covering the sky. I was a good enough shot to put down a Snow and a Canadian with an over under duck gun- I was more than content. I use every part of this bird except the down, which I hope to utilize next season. The breast, leg, and wing meat will go into smoking or sausage, the liver and heart are fried with eggs at breakfast, and the feet and leg bones are kept for soup stock. The collagen in the feet seeps out along with the marrow of the bones. These stocks are amazing during a bout of sickness.
