Chanterelles (Cantharellus cibarius) are a prominent fungus among others in the state of Oregon during the late summer into the first cold snap of that particular year. They are a delicious and an abundant resource. These can be eaten raw or cooked. They smell like apricots when fresh, the scent is incredibly intoxicating. I chop them and add to a fettuccine recipe with white wine sauce. Each Chanterelle is unique, in its look and its placement. Finding them only increases the fascination.
